Lemon Yogurt Travel Cake

In France, at school children learn to make a tasty yogurt cake (gateau au yaourt).

This inspired us to make our own version – “gateau de voyage” travel cake. We added granola for additional nutrition.

It’s an easy cake to make, kids will have fun with the mixing, whisking away.

Bake and freeze the cake in advance to take on your trip for breakfast picnics.

Lemon Yogurt Granola Cake

1 jar / ½ cup lemon yogurt (or any flavored yogurt)
3 eggs
1 tsp vanilla
Grated zest of one lemon
1 cup sugar
1/ ½ cups all purpose flour or cake flour
2 tsp baking powder
¼ tsp salt
½ cup neutral oil, such as canola
1 cup granola, smushed a little*

Preheat oven to 350 degrees. Butter and flour 8 ½ x 4 ½ inch loaf pan.

*Take 1 cup granola, turn out on wax paper, and smush with rolling pin to reduce any big lumps or chunks.

In a wide bowl, whisk yogurt and and eggs together.

Whisk in vanilla extract and lemon zest.

Add sugar, whisk to thoroughly combine.

Add flour, baking powder and salt, whisk just to combine.

Add oil and whisk until smooth.

Stir in granola and mix in.

Pour into prepared pan and bake for 40 – 45 minutes, or until knife inserted in center comes out clean. Depending on your loaf pan, could take a litte longer.

Cool cake on a rack.
